Yesterday was eventful. I met a friend to donate blood (like most things, it’s easier with a friend) and went grocery shopping afterward. Don’t do that, at least not in the Carolina heat. I got a reminder of how I’m not 22 anymore when I needed to sit for a moment before unloading all the groceries into the car. All is well, but — yes. Multitasking is often the enemy of the serene.
But the shopping trip meant I could make a lovely Mediterranean-style dinner, even if I forgot to pick up tomatoes. Making the meatballs (I used lamb) takes just a few minutes, then they bake for about 20 minutes, giving me time to make a platter with greens, feta, and cucumber. Drizzle a store-bought Green Goddess dressing over the meatballs, add a side of hummus and voilà! – dinner that’s a snap and feels special.
