One Good Thing

Today’s One Good Thing was a wonderful dinner shared with good friends. It was a Chicken Wing-Off, with wings done with a dry rub and then air-fried as well as another batch cooked in tangy BBQ sauce in an Insta-Pot then crisped under the broiler.

Sides included potato salad, rolls, corn on the cob (boiled with butter and milk added to the water), and baked beans. I got ambitious and made a cake from scratch for dessert, too.

By the way – cake from scratch really only takes about five minutes more than a box mix. This was a super-simple French yogurt cake (like this one!) with canned cherries added to the top of the batter. As the cake bakes, the fruit sinks into the rising cake. It’s moist and yummy – you should try it!

The food was delicious and the company was wonderful – certainly a mid-week treat. Oh – and always use unicorn corn holders if you have the chance.
